Description

A nutty granola that is good on its own, with yogurt, or as a topping for fruit. Gluten, soy and processed sugar-free.

Ingredients

2 1⁄2cQuinoa flakes
1cSeeds (sunflower, pumpkin - a mix of you faves)
1 1⁄2cChopped nuts (almond, pecans -a mix of your faves)
1⁄2tGround cinnamon
2TGround flax meal
1⁄2cPure honey
2tPure vanilla extract
2TCoconut oil, melted
1⁄2cShredded, unsweetened coconut (optional)

Instructions

Preheat oven to 300F. Mix together quinoa, seeds, nuts, cinnamon and flax meal in a large bowl. In a separate bowl, mix together honey, vanilla and melted coconut oil. Mix wet ingredients into the dry, until the dry ingredients are well coated. Spread mixture out on one or two baking sheets that have been covered in foil. Bake for approx. 30 minutes, stirring every 10 minutes, until lightly toasted and fragrant. Cool completely. Add shredded coconut, if using. Store in a sealed container.
